Cooking a competitive rack of ribs is no easy task to begin with and winning a Smithfield® Rib Super Series event is that much more of an accomplishment. Taking on the Rib Super Series challenge at the Bedford Blues and BBQ Festival in Bedford, TX, She Thinks My Slabs R Sexy walked away with the first place win for the day.
“These were some of the best ribs I’ve cooked in quite some time,” said Glenn Jarrett, pitmaster for She Thinks My Slabs R Sexy. “They scored a 180, which is my first 180 in KCBS, so I would say they were very, very good. Everything just went well with them.”
Jarrett described his ribs as being “sweet with heat on the back end,” and with a perfect 180 in hand, it’s hard to argue with that recipe!
Jarrett and his team typically compete in five to ten KCBS events per year, with one of their most notable wins being in the 2011 Sam’s Club National BBQ Tour where they took home the regional Grand Champion call in Fort Worth.
When it comes to walking away with a top placing call in ribs, Jarrett stresses the importance in using a consistent heat and maintaining a solid control over fire management. Of course, finding the perfect seasoning is of high importance as well.
“Try to find a seasoning that’s pleasing to the palate, but not overpowering in either direction,” said Jarrett. Jarrett also attributes his win to the use of Smithfield ribs, which are, as Jarrett describes, “more consistent as far as their weight per package and the uniformity in the fat content in the ribs are more uniformed.”
