Smithfield Rib Super Series: Atlanta Bar-B-Que Festival

Closing in on the final stretch of the season, the Rib Super Series headed to the Atlanta Bar-B-Que Festival September 13-14,where Que School took home the first place win.There is something so satisfying about cooking your best rack of ribs, and then receiving well-deserved credit, or even cash prizes, for them. The Smithfield® Rib Super Series is fully aware of that craved moment of glory and has been on a mission all season long to make sure the teams with the best ribs at a given KCBS event receive their due accolades. 

“We tried a new method this year,” said Chad Parker, Pitmaster for Que School. “We knew exactly what we were going to do. We didn’t experiment and obviously, it turned out great!” Que School only has a handful of competitions under their belt, but is quickly making a name for themselves in the circuit. When it comes to ribs, their secret perhaps lies in their firm stance on letting the meat speak for itself. “Don’t over-smoke them, and don’t over-sauce them. If you look at any commercial for ribs, they’re always smothered in sauce. It makes you wonder how they cook them and what they’re masking. If you cook them properly, you don’t need the sauce on there,” said Parker.
